Crispy Pan-Fried Zucchini Fritters
Crispy zucchini fritters are a great way to use up your summer zucchini. Serve them as a light vegetarian snack or a side meal with any Mediterranean style dish. Simply fry them in fresh extra virgin olive oil to taste the difference!
Shred zucchinis and carrot.
Use cheesecloth to remove the water from zucchinis.
Chop parsley and dill.
Add all the veggies in a large bowl then mix with beaten eggs, flour, baking powder and salt & pepper.
Heat decent amount of fresh extra virgin olive oil in a frying pan over medium heat.
Take small amounts of the mix with a spoon and pan-fry until golden brown on both sides.
Add a bit more olive oil into the pan, if necessary. Then repeat with the remaining mix.
Best served fresh out of the pan with yogurt.
