There's truly nothing better than fresh peaches in August. Except when they're baked and paired with creamy ice cream. This recipe is easy and makes for a delicious summer treat that's ready in no time. Rather than butter and sugar, our version relies on EVOO and honey to achieve a beautiful sweet caramelization on the fresh peaches.

Baked Peaches and Ice Cream

Ingredients

3 large ripe peaches
extra virgin olive oil
honey
ground cinnamon
vanilla ice cream
coarse or flake salt

Directions

Start by carefully cutting your peaches in half from stem-to-stem and removing the pits.
Place the six halves pit-side up on a baking tray.
Drizzle generously with olive oil and honey, so that the shallow pit hole is full.
Sprinkle with cinnamon.
Bake at 350F for about 20 mins, so that the peaches begin to soften.
Broil for another 10 to 15 minutes so that the oil and honey caramelize on top.
Remove from the oven once the peaches have reached a desired caramelization and allow to cool for a few minutes before serving.
Top with vanilla ice cream, more cinnamon, a pinch of coarse salt, and an extra drizzle of EVOO if desired.
