Ingredients

extra virgin olive oil
2 cups of chickpeas
1 onion
2 bundles of green spring onion
1 bundle of fresh parsley
1/3 bundle of fresh coriander
2-3 garlic cloves
1 tbsp. black pepper
1 tsp. red pepper flakes
desired amount of salt
1 tsp. cumin
2 tbsp. flour
1 tsp. baking powder
2 cups of yogurt
1/4 cup of tahini
1/2 lemon juice
desired amount of salt
2 tomato
1 cucumber
1 onion
1/2 bundle of fresh parsley
fresh lemon juice

Directions
Falafel preparation
Soak chickpeas in water over night.
Blend all the chopped veggies, chickpeas and spices using a food processor.
Transfer mixture to a bowl, add flour and baking powder then stir well until mixed.
Make small balls out of mixture and fry them in enough olive oil to cover until golden.
Sauce preparation
Stir yogurt, tahini, lemon juice, olive oil and salt in a bowl until mixed.
Salad preparation
Chop all the ingredients fine
Add evoo, salt and lemon juice then mix well.
Serving recommendation
Warm up the pita bread, add falafels and top up with sauce and salad.
