Ingredients

extra virgin olive oil
1 red onion
2 cups of cherry tomatoes
4-6 chicken thighs
4 garlic cloves
1/2 cup fresh mozzarella
fresh basil
salt and pepper
Directions
Heat 2 tbsp. of extra virgin olive oil in a large skillet pan over medium-heat. Once the oil is hot enough, start cooking the chicken thighs until each side is lightly browned.
Add desired amount of salt & pepper.
Make sure the chicken reaches 165F at the thickest part. After that, remove the chicken from the skillet pan to a plate and cover to keep it warm.
without cleaning the pan, add more evoo and start sautéing the chopped red onion and garlic on medium heat until caramelized.
Add cherry tomatoes. Once the tomatoes are softened, place the chicken thighs in the pan and top up with fresh mozzarella.
Cook covered for a few minutes on low heat to allow mozzarella to melt.
Garnish with fresh basil before serving.
