- Harvested via traditional methods each autumn and cold extracted within hours of harvesting to ensure low acidity, high antioxidant content, and guaranteed freshness.
- Grown on family farms that practice organic farming methods. This winter 2025-2026 harvest had zero detectable pesticides in an independent International Olive Council-approved lab analysis.
- Free Fatty Acidity: 0.4 (International legal limit for EVOO is 0.8)
- Polyphenol Count: 255.86 mg/kg (EU standards define high phenolic olive oil as containing at least 250 mg/kg of polyphenols.)

This olive oil has a mild, pleasant flavor, not bitter or peppery as found with other olive oils I have tried . I use for all cooking, dressings and used in a lemon olive oil cookie recipe - delish! I finally bought the larger bottle as I go through the smaller one quickly.
I also appreciate knowing the olives are grown on small family farms and one variety of olive is used.
The only negative thing to say about this olive oil is you'll never be able to purchase anything from the grocery store again.
